Baked Sweet Potatoes

 This is a twist on Candied Yams.
Something new to try.  :-)

Ingredients:
Sweet Potatoes, Real Butter, Sea Salt, Pepper, Parsley, and Raw Honey

Turn your oven on to 400 degrees.
You'll need a good sharp smooth edge, as Sweet Potatoes are hard to cut when they are raw.  Cut  the ends off and cut them into thick slices.

Cut the skin off.

Dice each slice.

Rinse the dirt off of them well.

Place 1T of Real Butter on a cookie sheet.  Put your Diced Sweet Potatoes in with the Butter.  Sprinkle with Sea Salt, Pepper, and Parsley.

Bake for 10mins take out and turn.  Sprinkle a little more Sea Salt, Pepper, and Parsley on top.  Bake another 10mins.

Pour Raw Honey over and stir.  Put back in oven and bake another 10mins.

Take out and serve.  I really enjoyed this one.

We served this with Veggie Burger - very good meal.





Recipe:
  • 2 - 3 Sweet Potatoes
  • 1T Real Butter
  • 1/4c Raw Honey
  • Sea Salt
  • Pepper
  • Parsley

  1. Preheat oven to 400 degrees.
  2. Slice the Potatoes into thick slices.
  3. Cut the off the skin.
  4. Dice each slice.
  5. Rinse the dirt off.
  6. Put onto a cookie sheet with the Butter and sprinkle with Sea Salt, Pepper, and Parsley.
  7. Bake for 10mins - take out and stir.
  8. Sprinkle with a little more Sea Salt, Pepper, and Parsley.
  9. Bake for another 10mins - take out and stir.
  10. Pour the Honey over them and stir.
  11. Bake for another 10mins.

Voila!  You are done!  :-)

Salsa Taco



A new twist on tacos.
Not too bad, if I say so myself.  :-)

Indredients:
Flour Tortillas, Real Butter, 1lb Hamburger, Salsa (you pick how mild), Shredded Cheddar, Lettuce,  Onion, Tomatoes (I'm using cherry tomatoes, but you can use whatever you want.  Or even drain a can of diced tomatoes)
Turn your oven on to 350.  Put your hamburger in your skillet and brown.

While your hamburger is browning, scrape some butter on a tortilla and place in the oven, directly on the racks.

Leave it in the oven for a few minutes, until the edges are starting to curl up.  This will leave it soft enough to fold into a taco.  If you're like me and would rather have a taco salad or a tostada, leave it in till it's golden brown.

Here's what it looks like when it's starting to curl up.

Add some salsa (about half a jar) into the hamburger and stir in.

Stir it in.  ...don't forget your tortillas!  :-)


Cook it on med heat till the juice is boiled down.

Cut up your vegetables.  I had left over lettuce and onion mix from a salad that I made, so all I needed was to cut up the tomatoes.

Fold your shell.

Put your toppings on it as to your liking.  I like to put the lettuce on first, then the meat, then the cheese - so it can melt, then the tomatoes.  Then maybe some salsa and a little sour cream.



Recipe:
  • Flour Tortillas
  • Real Butter
  • 1lb Hamburger
  • Salsa (you pick how mild)
  • Shredded Cheddar
  • Lettuce
  • Onion
  • Tomatoes
  1. Heat Oven to 350.
  2. Brown the hamburger.
  3. Add 1/2 jar of salsa into the hamburger and stir.
  4. Allow it to cook over med heat till the juice is boiled down.
  5. While the meat is cooking:
  6. Scrape some butter onto a flour tortilla.
  7. Heat in oven till the sides just start to curl up or till it's golden brown for a crunchier shell.
  8. Cut up the lettuce, onion, and tomatoes.
  9. Fold your shell in half.
  10. Then put your toppings on your shell.

Voila!

Cinnamon Treats

These are really good and perfect to serve with a Mexican meal.  :-)

Indredients:
Flour Tortillas, Real Butter, Ground Cinnamon, Sugar


Mix about 1t of Cinnamon with 1/4c of Sugar - this is just a guess.  I like my mixture to be more sugar then cinnamon, so adjust to your taste.







 Cut your Tortilla in four pieces.

Scrape butter on each piece.

Place them on a cookie sheet and sprinkle with your Cinnamon/Sugar mixture.  Put in oven and broil till it's golden brown.

Serve them with your favorite Mexican meal.








Recipe:
  • Flour Tortillas
  • Real Butter
  • Ground Cinnamon
  • Sugar

  1. Mix 1t cinnamon to 1/4c of sugar in a small bowl.
  2. Cut tortilla into 4 pieces.
  3. Scrape butter onto each piece.
  4. Place on cookie sheet and sprinkle with your cinnamon/sugar mixture.
  5. Broil in oven till it's golden brown.

Voila!

I served these with my Salsa Tacos.  The family enjoyed it.  :-)

Baked Florets

My family is used to me fixing this with cheese.
So, I was a bit nervous about making these.
Well, was I pleased to hear how much they liked this.

Ingredients:
Frozen Cauliflower, Broccoli, or both; Real Butter, Garlic Cloves, Fresh Parmesan, Sea Salt, Pepper, and Parsley to taste.

Turn your oven on to 450 degrees. Take about 1T of Real Butter and smear some on the bottom of a cookie sheet.

Leave the rest of your Butter on the pan.  Place your Florets and chopped up Garlic on the pan.  Sprinkle with Salt, Pepper, and Parsley.  Mix it all together.  Then put it in the oven for 10 minutes.

Take it out and stir.  Then, put it back in the oven for another 10 minutes.

Then broil it till it gets a nice golden brown.

Serve it as a side dish and sprinkle some Parmesan on it.








Recipe:
  • 1bg Frozen Cauliflower, Broccoli, or both
  • 1T Real Butter
  • 1 - 2 Garlic Cloves
  • Fresh Parmesan
  • Sea Salt, Pepper, and Parsley to taste

  1. Set your oven to 450 degrees.
  2. Smear some butter on the bottom of your cookie sheet.
  3. Leave the remaining butter on the sheet.
  4. Place your florets and chopped garlic cloves on the cookie sheet.
  5. Season with Salt, Pepper, and Parsley and stir.
  6. Place in oven for 20 minutes, stiring halfway through.
  7. Broil for 5 minutes.
  8. Serve with fresh parmesan on it.

Voila!  We ate this with Seasoned Meaty Vegetable Parmesan.  Very good dinner.

Chicken Spinach Bake

This turned out great!  My daughter went back for seconds.
That's always a plus in my book.

Ingredients:
Skinless Boneless Chicken Breast, 3 Garlic Cloves (We love garlic, so I use more), 1lb (16oz) Frozen Spinach, Shredded Mozzarella, 1 Red Bell Pepper, 1T Real Butter - Unsalted (not pictured, sorry), Sea Salt, Pepper, Parsley

Turn your oven on to 400 degrees.  Place your skillet over a medium heat.  Let it warm up while you get the chicken ready.  Slice the Chicken, lengthwise, in half

Salt and Pepper and rub in.  Turn them over and do the same on the other side.

Place them into a hot skillet to sear it.  Cook a few minutes and turn to sear the other side.  This will help keep it nice and juicy inside.

While your chicken is cooking, slice up your veggies.

When your chicken has this nice golden look, on both sides, place them on a cookie sheet.  Be sure to grease your pan first!  With Olive Oil Spray.  I learned that one the hard way.  :-(

Put your Spinach, Peppers, Garlic, Butter, and Salt and Pepper in the skillet, over medium heat.

Let is saute till the garlic is transparent.  Doesn't that look yummy!?

Then, spoon the spinach onto each chicken breast, sprinkling some Mozzarella on top.  Place a strip of Red Pepper over that.  Then sprinkle some Parsley over that.  Place in oven for 10 minutes.

Here is how it looks after taking it out of the oven.  At this point, I realized that I should have greased the pan first.  :-/

And there you go.  We had Cranberry Apple Salad with this.  Turned out to be a great dinner.  :-)






Recipe:
  • 3 Skinless Boneless Chicken Breast
  • 3 Garlic Cloves
  • 1 Red Bell Pepper
  • 1lb (16oz) Frozen Spinach
  • Shredded Mozzarella
  • 1T Real Butter - unsalted
  • Sea Salt, Pepper, and Parsley to taste

Directions
  1. Turn Oven on to 400 Degrees.
  2. Place your skillet over medium heat.
  3. Slice your chicken, lengthwise, in half and lay out flat.
  4. Salt and pepper, then rub in on both sides.
  5. Place in hot skillet to sear the side - cook for a few minutes
  6. Flip to sear the other side - cook for a few more minutes
  7. While chicken is cooking, slice up the garlic and peppers
  8. When chicken is golden brown on each side, place them on a greased cookie sheet.
  9. Put the spinach, sliced up veggies, salt, pepper, and butter into skillet and saute till garlic is transparent.
  10. Spoon out spinach onto each chicken breast.
  11. Sprinkle mozzarella on top.
  12. Place 1 strip of pepper on top then sprinkle with parsley
  13. Place in oven for 10 minutes.

Voila!  You're done!  :-)
