Stuffed Pepper

 Very fulfilling and delicious meal!  :-)

Ingredients:
Hamburger, Peppers, Onion, Garlic Cloves, Rice, Beef Broth, Diced Tomatoes, Tomato Sauce, Mozzarella Cheese (not pictured), Italian Seasoning, Parsley, Salt, Pepper  ...Mushrooms would be good in this, but I didn't have any.  :-(

Set your oven to 400 degrees.
Boil about 1/2c to 1c of rice in 2c of Beef Broth.  Boil the rice till it's done.  If you're using Minute Rice, follow the directions for 1 - 2 servings and boil it in Beef Broth.

Chop up your Garlic and dice 1/2 of the onion.
We like lots of Garlic.  :-)

In a bowl, put your 1lb of Hamburger, Chopped Garlic, Diced Onion, Salt, Pepper, Parsley, 1T Italian Seasoning, and set aside.  

Don't forget to check your rice.  :-)

Cut a lid off of your Peppers.

Pull out and trash the seeds.

Pull out the ribs and trash them.  If there's any seeds left inside, just rinse them out.

Once all the juice has boiled off of your rice, pour it into the bowl that has the hamburger in it.  Let's let that cool for a bit, don't want to burn our hands.


In that same sauce pan, pour in your Tomato Sauce, Diced Tomatoes, Salt, Pepper, 1T Italian Seasoning, Parsley, and we like ours a little on the sweet side, so add 1/4c of Sugar.  Stir and let that come to a boil.

Mix your hamburger mixture.

Stuff each pepper tightly.  Any extra meat, crumble in the bottom of the pan.  I didn't have any left over this time.

Pour the sauce over each pepper and into the pan.  Place the pan onto a foil covered cookie sheet and place into oven.  Bake for 45minutes to 1hr.

Oh man!  doesn't that look yummy?  See why I highly recommend you put a foil covered cookie sheet under the pan?  :-)

Take one and cut it in half.  Lots of juice coming out, and it looks so good!

Pour some of the sauce over it and sprinkle with Mozzarella Cheese.  And there you go!  :-D

Veggie Burger

A favorite of my family.
Actually, this is something that I make quite often.
Since this doesn't have anything that's not natural in it,
I thought I would share it with you.

Ingredients:
Hamburger, Bell Pepper, Onion, Celery, Garlic, Mushrooms, Sea Salt, Pepper, Parsley, and Real Butter (not pictured, sorry).

Dice 1/2 Onion and Slice the other 1/2.  Chop up the celery and garlic.  We like a lot of garlic so I used 4 cloves.  You use as many as you would like.  My hubby would like me to use more.  You only need 1 celery stick, but I used what I had left and put some in a salad.

Throw your veggies into a skillet with a slab of Real Butter.   ...OOPS  Looks like I forgot something!

The PEPPER!  Chop up 1/2 of Bell Pepper.  I used the other half in a salad.

Throw the pepper in too and saute it till the onions are transparent.

Put your Hamburger, and your sauteed Veggies, Salt, Pepper, and Parsley into a bowl.

Mix well together.  Yes, it's safe to use your hands.  It adds that TLC!  :-)  Just be sure to wash them well afterwards.

Form them into patties and put them in the same skillet that you sauteed your veggies in, and cook them over medium heat.  Make sure the skillet is hot first.  You can tell that it's hot enough by flicking some water into the skillet.  If the water dances across the skillet, then it's hot enough.

After getting your patties in, throw in your sliced Onion and Mushroom.  Let the patties cook until the edges are brown.

Flip everything over and let it cook another 3 - 5 minutes; depending on how thick you made your patties.  Oh man!  It sure does smell good!

and Voila!  You're done.  :-)  Doesn't that look yummy!

We served this with Baked Sweet Potatoes.  Good Meal!  ;-)





Recipe:
  • 1lb Hamburger
  • 1/2 Bell Pepper
  • 1 Onion
  • 1 Celery Stick
  • 4 Garlic Cloves
  • 1 Batch of Mushrooms
  • Sea Salt
  • Pepper
  • Parsley
  • 1t Real Butter

  1. Slice 1/2 of the onion and diced the other 1/2.
  2. Chop the Bell Pepper, Celery Stick, and Garlic Cloves.
  3. Saute the veggies in butter in a skillet.
  4. Put the Hamburger, sauteed veggies, Salt, Pepper, and  Parsley in a bowl and mix together with your hands.
  5. Form into patties
  6. Place them into the same skillet that you sauteed the veggies in.  Make sure the skillet is hot first.
  7. Place the 1/2 slice onion and mushrooms in the skillet with the patties.
  8. Cook over medium heat until the edges are brown.
  9. Flip everything over and cook another 3 to 5 minutes, depending on the thickness of the patties.
  10. And Serve and Enjoy!  :-)

Salsa Taco



A new twist on tacos.
Not too bad, if I say so myself.  :-)

Indredients:
Flour Tortillas, Real Butter, 1lb Hamburger, Salsa (you pick how mild), Shredded Cheddar, Lettuce,  Onion, Tomatoes (I'm using cherry tomatoes, but you can use whatever you want.  Or even drain a can of diced tomatoes)
Turn your oven on to 350.  Put your hamburger in your skillet and brown.

While your hamburger is browning, scrape some butter on a tortilla and place in the oven, directly on the racks.

Leave it in the oven for a few minutes, until the edges are starting to curl up.  This will leave it soft enough to fold into a taco.  If you're like me and would rather have a taco salad or a tostada, leave it in till it's golden brown.

Here's what it looks like when it's starting to curl up.

Add some salsa (about half a jar) into the hamburger and stir in.

Stir it in.  ...don't forget your tortillas!  :-)


Cook it on med heat till the juice is boiled down.

Cut up your vegetables.  I had left over lettuce and onion mix from a salad that I made, so all I needed was to cut up the tomatoes.

Fold your shell.

Put your toppings on it as to your liking.  I like to put the lettuce on first, then the meat, then the cheese - so it can melt, then the tomatoes.  Then maybe some salsa and a little sour cream.



Recipe:
  • Flour Tortillas
  • Real Butter
  • 1lb Hamburger
  • Salsa (you pick how mild)
  • Shredded Cheddar
  • Lettuce
  • Onion
  • Tomatoes
  1. Heat Oven to 350.

  3. Add 1/2 jar of salsa into the hamburger and stir.
  4. Allow it to cook over med heat till the juice is boiled down.
  5. While the meat is cooking:
  6. Scrape some butter onto a flour tortilla.
  7. Heat in oven till the sides just start to curl up or till it's golden brown for a crunchier shell.
  8. Cut up the lettuce, onion, and tomatoes.
  9. Fold your shell in half.
  10. Then put your toppings on your shell.

Voila!

Seasoned Meaty Vegetable Parmesan

My husband named this one.
He had seconds on this!
That's always a plus in my book.  ;-)

Ingredients:
1lb Ground Beef (I use 85/15), 1 Bell Pepper (any color), 1sm Onion, 2 Garlic Cloves (we love garlic, so I used more), 8oz Mushrooms, 2 Celery Sticks, 2 Zucchinis, 2 cans of Diced Tomatoes (Or 2 fresh Tomatoes - diced), 3T Ketchup, Fresh Shredded Parmesan, Sea Salt, Pepper, Parsley to taste

Chop up your veggies and place your Beef, Pepper, Celery, Zucchini, Onion, and Garlic in a pan.

Ground up the meat and add your Salt, Pepper, and Parsley and stir.  Let it saute till the onions are transparent.

Drain the tomatoes.

Slice your Mushrooms.

Add your Tomatoes, Mushrooms, Ketchup, and Parsley into the pan and stir in.  Let it continue to saute a few more minutes so the Mushrooms can get cooked.

At this point, I decided to add Italian Seasoning.  You may if you want to.

Serve with Fresh Shredded Parmesan sprinkled over the dish.  Yummy!  :-)







Recipe:
  • 1lb Ground Beef
  • 1 Bell Pepper - any color- diced
  • 1sm Onion - diced
  • 2 Garlic Cloves - chopped
  • 2 Celery Sticks - sliced
  • 2 Zucchinis - skinned and sliced
  • 8oz Mushrooms - sliced
  • 2 cans of Diced Tomatoes (Or 2 fresh Tomatoes - diced) - drained
  • 3T Ketchup
  • Fresh Shredded Parmesan
  • Sea Salt, Pepper, Parsley to taste

  1. Put Beef,  Bell Pepper, Onion, Garlic, Celery, Zucchini in a pan and ground the meat.
  2. Stir in Salt, Pepper, and Parsley.
  3. Let it saute till the onions are transparent.
  4. Add Mushrooms, Tomatoes, and Ketchup, and stir.
  5. Let it continue to saute till the mushrooms are soft.
  6. Serve with Parmesan sprinkled on.

Voila!  Hope you like this as much as we did.  :-)  We had this with Baked Florets.  Made a really nice dinner.

Beef Confetti Rice

We had this for dinner lastnight.  It turned out pretty good, if I do say so myself.  :-)

 Ingredients:
3C Chicken Broth, 1C Rice,  1lb Hamburger, 1/2 Green Pepper, 1/2 Yellow Pepper, 1/2 Red Pepper, 1 Onion, 2 Garlic Cloves, 6 Mushrooms, 2 Celery Sticks, 3T Mustard, 4T Honey, Parsley, Sea Salt & Pepper to taste.

 Put the broth and rice in your pan and let it simmer for about 20mins, or until done.  (If you're going to use minute rice, follow the direction on the box and use the broth instead of water.)

While your rice is cooking, chop up all your veggies, except the mushrooms.  Doesn't that look so nice?

Put your hamburger and chopped up veggies in a skillet, no oil or butter, ground up and brown.  Let it cook till the veggies are transparent - not crunchy when you bite into it.

 While your skillet is going, chop up your mushrooms.

Then put your mushrooms into your skillet and stir.

Add salt, pepper, and parsley; then stir.

Add a little salt, pepper, and parsley into the rice; then stir.

Add your mustard and honey into the meat mixture; then stir.  Let it cook about a minute longer to make sure the sauce is well heated and mixed in.

Serve the meat and veggies over the rice.  And Voila!  You're done!  :-)  It was so good!  I served mine with some harvard beets.





Recipe:
  • 3C Chicken Broth
  • 1C Rice

  • 1/2 Green Pepper
  • 1/2 Yellow Pepper

  • 1 Onion
  • 2 Garlic Cloves
  • 6 Mushrooms
  • 3T Mustard
  • 4T Honey
  • Parsley, Sea Salt, Pepper to taste

  1. Simmer the Rice in the Broth.
  2. Chop up all veggies except Mushrooms.
  3. Ground and Brown Hamburger and chopped up Veggies in skillet. Do not add oil or butter.
  4. Chop up Mushrooms and add to the meat mixture.
  5. Add Sea Salt, Pepper, and Parsley to both meat mixture and rice and stir.
  6. Add Honey and Mustard to meat mixture; cook a couple of more minutes longer.
  7. Serve the meat mixture over the rice.
