Beef Confetti Rice

We had this for dinner lastnight.  It turned out pretty good, if I do say so myself.  :-)

 Ingredients:
3C Chicken Broth, 1C Rice,  1lb Hamburger, 1/2 Green Pepper, 1/2 Yellow Pepper, 1/2 Red Pepper, 1 Onion, 2 Garlic Cloves, 6 Mushrooms, 2 Celery Sticks, 3T Mustard, 4T Honey, Parsley, Sea Salt & Pepper to taste.

 Put the broth and rice in your pan and let it simmer for about 20mins, or until done.  (If you're going to use minute rice, follow the direction on the box and use the broth instead of water.)

While your rice is cooking, chop up all your veggies, except the mushrooms.  Doesn't that look so nice?

Put your hamburger and chopped up veggies in a skillet, no oil or butter, ground up and brown.  Let it cook till the veggies are transparent - not crunchy when you bite into it.

 While your skillet is going, chop up your mushrooms.

Then put your mushrooms into your skillet and stir.

Add salt, pepper, and parsley; then stir.

Add a little salt, pepper, and parsley into the rice; then stir.

Add your mustard and honey into the meat mixture; then stir.  Let it cook about a minute longer to make sure the sauce is well heated and mixed in.

Serve the meat and veggies over the rice.  And Voila!  You're done!  :-)  It was so good!  I served mine with some harvard beets.





Recipe:
  • 3C Chicken Broth
  • 1C Rice
  • 1lb Hamburger
  • 1/2 Green Pepper
  • 1/2 Yellow Pepper
  • 1/2 Red Pepper
  • 1 Onion
  • 2 Garlic Cloves
  • 6 Mushrooms
  • 3T Mustard
  • 4T Honey
  • Parsley, Sea Salt, Pepper to taste

  1. Simmer the Rice in the Broth.
  2. Chop up all veggies except Mushrooms.
  3. Ground and Brown Hamburger and chopped up Veggies in skillet. Do not add oil or butter.
  4. Chop up Mushrooms and add to the meat mixture.
  5. Add Sea Salt, Pepper, and Parsley to both meat mixture and rice and stir.
  6. Add Honey and Mustard to meat mixture; cook a couple of more minutes longer.
  7. Serve the meat mixture over the rice.
